Quark-Baiser-Kuchen (Quark Cheesecake)

When I was in Germany, I enjoyed this cake so much that I asked Hans and Marielle for the recipe.

She wrote to me "Here is the recipe of the cake Kevin liked best. The lady who gave me the recipe calls it the "Goldtröpfchen Kuchen" (golden droplets). When I asked her what these droplets consisted of she told me that they simply appear after the baking, never mind what chemical process causes this." If you follow parts A, B and C of the recipe separately, you avoid producing "scrambled eggs".

Quark-Baiser-Kuchen (that's the official name)

Part A: Dough:

75 g butter
75 g sugar
1 egg
200g flour
1 teaspoon baking powder

Part B: Cheese mixture

500g curds (the creamy sort, 40%)
100g sugar
400ml milk
1/2 cup of oil
1 packet of pudding powder
3 egg yolks

Part C: Baiser (meringue)

3 egg whites
100g sugar

Part A: mix the ingredients, spread the dough into a baking dish (26 cm in diameter), form a rim (about 2 cm high).

Part B: mix the curds, sugar, oil and egg yolks, add the pudding powder and the milk (caution: very liquid!); pour this mixture on the dough and bake for 45 min. at 180° C.

Part C: beat the egg whites, add the sugar, spread the baiser on top of the cake. Bake for another 10 min. During these 10 minutes watch the cake and take it out before the baiser starts to get brown. Don't spread the baiser too smoothly, rather, make a few peaks or crests that will start to get brown first. When they do brown, immediately remove the cake from the oven. The droplets will appear all by themselves when the cake cools off.

I got this recipe from my sister, whose mother-in-law is from Wales. In their family they call these the "official recipe" for Welsh Cakes.

Welsh cakes

4 cups of flour
1 cup sugar
1 tsp baking powder
1/4 tsp salt
1 cup butter
1/2 lb currants (1 2/3 cups)
1 egg
1/2 cup milk (or more)

Blend dry ingredients, then blend in butter with pastry blender or knives. Mix egg with milk. Add to dry ingredients. Mix until well blended. Dough should be manageable for rolling. Add more milk if necessary (or flour if too sticky). Roll to 1/2" thickness and cut with donut cutter. Fry at 350 at 350° F for approximately 4 minutes per side, until lightly golden. Remove from heat and sprinkle with icing sugar. Best if slightly undercooked. Cool completely before eating. These freeze well.

Here is another recipe I got from my sister, and I realize that it's not health conscious but it's sure delicious...

Chocolate brownies (Please, Kevin, I'm dying...)

1 cup butter, melted
1 cup sugar
1 cup brown sugar
1 cup flour
3/4 cup cocoa
3 eggs large
1/2 tsp baking powder
1 & 1/2 tsp vanilla
1 cup nuts (optional)

Melt butter, add sugars and mix well. Add cocoa. Add slightly beaten eggs, one at a time. Add the rest of the ingredients. Bake in a 9 x 13" pan at 350 degrees F. for about 30 minutes.

Maple syrup pudding

First, put 1 cup of maple syrup in bottom of buttered casserole dish

Mix together:

1 tbsp butter
3 tbsp sugar
1 egg
1/2 cup liquid
1 cup flour
2 tsp baking powder

Mix together (will be thick). Drop into maple syrup

Bake at 350° for 1/2 hr. Test like cake.

Van Vliet Chili

2 pounds hamburger
1 onion
1 can kidney beans
2 tsp worcestershire sauce
2 cans 16 oz stewed tomatoes
1/4 tsp pepper
1/2 tsp dry mustard
3 tsp chili powder
1 can corn
1 green pepper
1 package old el paso chili mix

Mix together. Simmer for 3 hours.

Fettuccini Alfredo

1 pkg cream cheese
3/4 cup parmesan
1/4 cup butter
1/2 cup milk
4 cups noodles

Chocolate Mousse Pie a la Kevin

1 prepared graham crust
1 1/2 cups milk
1 envelope. Gelatin clear
6 squares of semi sweet chocolate or 6 ounces of chocolate chips
1 teaspoon vanilla
2 cups of whipped cream

In saucepan sprinkle gelatin over milk & let stand 1 minute. Stir on low heat until dissolved & add chocolate & melt everything. Add vanilla & chill for 1 hours until pudding texture stirring occasionally. Then take out and fold in the whipped cream and put into pie shell and chill for 4 hours.

Cocktail sauce

3/4 cup ketchup
1 tsp lemon juice
1 tablespoon ground onions
1/8 cup horse radish
tabasco sauce & salt, pepper to taste

Out of this world Gingerbread

1 cup sugar
1 cup canola oil
1 cup molasses
1 tsp baking soda, dissolved in 1 cup boiling water
1 tsp ginger
1/2 tsp cinnamon
1/2 tsp ground cloves
2.5 cups of flour
2 eggs well beaten

Combine ingredients in their order. Bake at 350° in a 9x12 pan for 45-50 minutes.

Kevin's Key Lime Cheesecake Squares

Crust:

3/4 cups flour
1/4 cup brown sugar
1/4 cup walnuts (crushed)
1/4 cup butter

Mix till crumbly and pat into a 8" square pan. Bake at 350° for 15 minutes

Filling:

1 pkg cream cheese (250g)
1/2 cup sugar
1 egg
4 tsp lime juice

Beat the hell out of the cream cheese and add all the ingredients until smooth. Poor onto cooled crust and bake for 12-15 min. At 350°. Chill before serving. Excellent for freezing.

Plum Pudding

1 cup flour
1/2 cup sugar
1/2 cup bread crumbs
1/2 cup butter
1/2 cup chopped raisins
1/2 cup chopped currants
1/2 cup milk
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup molasses
1 egg

Grease your moulding and sprinkle with white sugar. Mix dry stuff with butter. Warm up the milk and mix with other liquids. Then mix altogether. Steam for 3 hours with water 1/2 way up the side.

Best Banana Bread Ever!

1 cup Miracle whip (or light)
1 cup mashed ripe banana  (approx. 3-4 med. bananas)
2 cups white flour (I have used 1 and 1 with whole wheat)
3/4 cup white sugar
2 tsp. baking soda

Heat oven to 350 F.  Combine wet. In separate bowl combine dry. Add dry to wet and mix. Pour into greased loaf pan. Bake for 55-65 minutes. Let stand 10 minutes. Remove from pan and cool completely.

Crock Pot Triple Chocolate Mess

1 package chocolate cake mix
1 pint sour cream
1 small package instant chocolate pudding
1 small bag chocolate chips
3/4 cup oil
4 eggs
1 cup water

Spray crockpot with non-stick spray. Mix all ingredients. Pour into crockpot.    Cook on low for 4-5 hours.  Serve in a bowl with ice cream.
